Analysis of proteins from noni leaves reveals that they are easily digested by pepsin, a digestive enzyme in the stomach that breaks down proteins. A characteristic of non-allergen food proteins is that they are readily digested by pepsin. This provides further evidence for the safe use of noni leaves as food.
